Rice Wine Recipe | Rice And Raisins Wine
- White rice 200 gms
- Black raisins 50 gms
- Sugar 375 gms ( for less sweet) to 400 gms
- Boiled and cooled water 1 lit
- Yeast 1/2 teaspoon
- Lemon 1/2
- Method
- In a glass bottle or barani put all ingredients mix well. Cover and keep in a dark place (cupboard) next day onwards stir every alternative day till 20 th day.On the 21st day strain the wine. Keep this wine in the cleaned same bottle cover the bottle with lid and again store in a dark place for two days.After two days bottle the rice and raisins wine.

- INGREDIENTS
- black raisins 1/2 kg (seedless)
- sugar 10 tablespoons
- yeast 3/4 teaspoon
- boiled and cooled water 1 1/4 lit
- lemon 1/2
- cloves 12
- cinnamon 1 piece
- METHOD
- Wash the black raisins 2 to 3 times in tap water. In a
blender put the dry grapes and 750 ml of water from boiled and cooled.blend for
10 to 15 seconds. (just crush the dry grapes) transfer this into a glass jar or
bharani. Add remaining 1/2 litre water to this raisins.Add cloves,cinnamon lemon
pieces yeast and sugar.mix everything very well. Cover the jar with lid and
cloth tightly. Store it in a dark place.The next day onwards start stirring it
with a wooden spoon until 9 days (try to stir the same time every day)(The
raisins start to float) On the 10th day strain, the wine. (taste the wine and check if
you need to add more sugar. 3or4 tablespoons sugar you can add according to your
taste.After adding sugar stir well).Bottle the wine.You can start to drink the
wine on the 10 th day itself.The longer the wine ages, the better it tastes .

BUTTERSCOTCH GLAZE
INGREDIENTS
- sugar 21/2 tablespoons
- butter 2 tablespoons
- cream 3/4 cup
- condensed milk 1/4 cup
- gelatin 1 teaspoon
- cold water 1 1/2 tablespoons
- piping gel 3 tables spoon
Place cold water in a small bowl and add gelatin .keep it for 5 mins. simply heat sugar in a saucepan until it melts and begins to brown. when the sugar is melted and caramelized immediately switch off the flame add butter, mix well, add condensed milk stir well add cream to this keep stirring, switch on flame .keep the pan on a low flame let it start boil .then add piping gel , mix it very well. switch off the flame, after that add gelatin . allow to cool
CARAMELISED NUTS
cashew nuts 50 gms
ghee 1/2 tablespoons
sugar 3 tablespoons
water 1 teaspoon
soda by carb a pinch
toast the nuts in ghee. transfer this on a butter paper let it cool down and crush them.In a pan put sugar and water and make caramel .when the sugar is caramelized add soda by carb and nuts.once the sugar coats the nuts well transfer this on a butter paper let it cool . after that crush them.
pour the butterscotch glaze on top of an iced cake and spread glaze evenly .and decorate the side of the cake with caramelized nuts.keep the cake in the fridge .
