BUTTERSCOTCH GLAZE FOR CAKE|BUTTERSCOTCH MIRROR GLAZE






 BUTTERSCOTCH GLAZE

 INGREDIENTS

  •  sugar  21/2 tablespoons
  • butter 2 tablespoons
  • cream  3/4 cup
  • condensed milk   1/4 cup
  • gelatin  1 teaspoon
  • cold water  1 1/2 tablespoons
  • piping gel  3 tables spoon  

 Place cold water in a small  bowl  and  add gelatin .keep it for 5 mins. simply heat sugar in a saucepan until it melts and begins to brown. when the sugar is melted and caramelized  immediately switch off the flame add butter, mix well, add condensed milk stir well add cream to this keep stirring, switch on flame .keep the pan on a low flame let it start boil .then add piping gel , mix it very well. switch off the flame, after that add gelatin . allow to cool

CARAMELISED NUTS

cashew nuts  50 gms
 ghee  1/2 tablespoons
sugar 3 tablespoons
water  1 teaspoon
soda by carb a pinch
toast the nuts in ghee. transfer this on a butter paper let it cool down and crush them.In a pan put sugar and water and make caramel .when the sugar is caramelized add soda by carb and nuts.once the sugar coats the nuts well transfer this on a butter paper let it cool . after that crush them.
pour the butterscotch glaze on top of an iced cake and spread glaze evenly .and decorate the side of the cake with caramelized nuts.keep the cake in the fridge .
