Yakhni pulao or pilaf is a one-pot rice dish. The main ingredient for yakhni recipes is the broth or stock which is used to cook the rice and vegetables .Traditionally yakhni pulao is mainly prepared with chicken or mutton.
The recipe gets its name Yakhni pulao as the rice is cooked in stock or broth.Yakhni means stock.Today I am making Kashmiri style yakhni pulao with vegetables.

Ingredients rice 500 gm /21/2 cups water 6 cups for making stock potato 1 big carrot 1 big beans 15 nos cauliflower 1 cup salt coriander seeds 1 tablespoon fennel seeds 1 teaspoon cardamom 5 cloves 8 to 10 cinnamon 1 ginger 1 salt coriander leaves 5 to 6 stem oil 1 tablespoon ghee 1 tablespoon cardamom 5 cloves 6 cinnamon 1 onion 1 big ginger garlic paste 2 tablespoons green chillies 5 curd 4 tablespoons vegetable stock 5 cups chopped coriander leaves 1/2 cup ghee 1 teaspoon fried onion 2 onions coriander leaves for garnishing
